A Weight Watcher Hearty Lunch – 9 points!

Healthy Spanish Omlette -9 WW pro points!
  • 3 eggs (3 white 1 yolk)
  • 1 Tomato
  • 1 Spring onion
  • 1 small closed cup mushroom
  • Salt & pepper
  • 2 slices of thin sliced ham
  • Spray fat
  • 15g of half fat grated cheese!

Fry the tomato, ham, mushroom and spring onion in spray fat with the added salt and pepper.

Then add the egg already whisked with a dash of water.

Cook on medium heat, using a spatula to get all the egg underneath the omelette so it cooks. Once the bottom is cooked, put heat on low and cover with a lid. After a view minutes it should be set to flip over! Turn it up high and add the sprinkle of cheese!

Fold over and serve with a slice of granary/seeded toast! Voila!

All for 9 points. Perfect for the weekend, post runs, or when you’ve had a light breakfast!
