

Today I was craving something fresh with beans and avocado. So straight onto Pinterest I was and searched what I could think of, and ‘Burrito Bowl’ came up. I decided to make my own version and this is what you would need……
- Cup of rice
- diced red onion
- sweetcorn
- cherry tomatos in quarters
- chopped up avocado
- Sweetcorn
- Baby gem lettuce leaves
- Olive oil
- quorn
- chilli powder/chilli mix
- Taco beans
- garlic
- sour cream
- corriander
Most of the ingredients you can just chop and place them in the bowl or plate, which is why this dish is so simple.
The only thing you need to cook up is the chilli that goes in the lettuce leaves and some rice. I used quorn for this but you can obviously use meat mince if you’re making it for the meat eaters!
Everyone has their own way of making chilli. I literally add packet chilli mix with some cold water and add to the pan with my quorn, add garlic and the taco beans.
Once cooked, add this to the lettuce leaves which act as the taco.
Sprinkle some olive oil over the plate with some lime juice, coriander and serve with sour cream and a sprinkle of cheese!
If you cook a little extra of everything then you can make a pack lunch for work the next day. Everyone will be envious of you!
