Halloumi & Quinoa

 

This quick vegetarian meal is full of goodness and is really quick to make.

All you need is….

Halloumi
Quinoa
Sugar snap peas
Cherry Tomatoes
Courgette
Garlic Powder
Soy Sauce
Turmeric

With the courgette I use a a peeler to peel it into strips. I chuck that with the sugar snaps peas, cherry tomatoes, garlic powder, soy sauce and turmeric.

After they have all softened, I add the cooked quinoa and in a separate pan fry the halloumi.

And that is about it!

If you want more spice you can add some chilli or sub the halloumi for tofu.
