Fancy some soup that’s really easy to make and is packed with iron?
Salads are great but I need variety and the soups at work can be unpredictable or not vegetarian! Randomly on Wednesday evening I decided to make some homemade soup for my lunch the next day. I knew I needed iron in there somewhere so I raided the fridge.
- Red onion
- Chestnut mushrooms
- Spinach (couple of handfuls as they shrink!)
- Kale (a handful)
- Thyme (few sprinkles)
- Garlic salt (to preference)
- Single cream
- Vegetable stock cube (jug)
I chopped up the ingredients in a saucepan with some fry light, then added half of the stock and a bit of single cream (lets keep it healthy yeah?) I left it simmering for a bit just incase some of the veggies were still hard, then when I was happy I turned off the heat. (The reason I turned off the heat was because in the past when I’ve made soup before, I’ve ended up burning myself when I’ve blended it…..it splashes!) Then you blend it. That’s it. if it’s too thick, add some more stock and simmer for a bit more. Leave to cool before putting it in the fridge.
Soup is the easiest thing to do. Chop, stock, blend. That’s it.
